I just add salt and pepper and a small amout of brown sugar to the sauerkraut.I cook it all together in a giant stock pot over the stovegive me ideas to improve itthank you

Try throwing in some caraway seeds, these are the seeds used in making Bavarian Sauerkraut. They also wprk wellwith the Pork.

My mom made the BEST saurkraut- even those that "hated the stuff" came back for seconds. Cook 5 slices bacon in a pan until crisp, set aside and remove all but 1 tbs bacon fat. Cook one sliced onion in the acon fat until soft. Add 1 chopped apple, 1 tbs brown sugar and 2 tsp caraway and 2 bags of rinsed sauerkraut ( use the bagged kind and rinse well) Add 1/2 bottle flat beer and cook until liquid is absorped. Sprinkle with the reserved bacon pieces. You can then serve that over the hot dogs in good quality rolls with a spicy brown mustard, or make a bed of sauerkraut and top with the pork ( depends on the cut, but cook it with mustard and onions and apples...) Or, you could cook it all together as you have been doing- cook the pork in the bacon fat before you add the onions, a=use the entire can of beer and maybe some apple cider and cook the dumplings in it before the liquid boils away. Sounds yummy!!
